The Pennant Bread Basket Parker House White Dinner Roll is made with the goodness of enriched flour and soybean oil. This bread dough is easy to handle and make. The Pennant Parker House White Dinner Roll Bread Dough bulk pack is ideal for brasseries and bakeries.

Preparation instruction: 1. Keep frozen until ready to use. 2. Arrange frozen dough pieces on a lined sheet pan. Pieces may be arranged in cluster configuration (one finger-width apart) or in individual roll configuration (far enough apart so they do not proof into each other). 3. Cover frozen pieces on pan. 4. Thaw according to LAB METHOD or OVERNIGHT METHOD as detailed below. LAB METHOD: Hold covered pan at room temperature untiil dough reaches internal temperature of 60 degrees F. OVERNIGHT METHOD: Hold covered pan in 35-39 degree F retarder for 8-12 hours. Remove from retarder and hold at room tempeature until dough reaches internal temperature of 50-55 degrees F. 5. Preheat oven and proof box for 30-60 minutes. (See steps 5 and 6 for proofer and oven settings.) 5a. Place thawed dough pieces in proofer and proof using the following settings: Humidity 80%-90%. Temperature: 95-105 degrees F. Proof Time: 40 minutes. 6. Bake proofed dough in oven at the following settings: Oven Type: Rack Oven Temp: 380 degrees F. Oven Steam: None. Bake Time: 14 minutes or until crust is a golden brown color. Note that oven time and temperature needs may vary according to individual ovens. 7. Cool for 30 minutes before serving.
