Preparation instruction: COOKING INSTRUCTIONS
1. CONVECTION OVEN
2. Preheat oven to 300°F.
3. Place tray on a baking sheet, tent lid slightly.
4. Cook product until internal temperature of 175-180°F is reached.
5. Remove lid.
6. Continue cooking until a minimum internal Temperature of 185-190°F is reached or until product sets up and is lightly browned on top.
COMBI OVEN with Steam Cooking Instructions
1. Preheat oven to 300°F Place tray on a baking sheet.
2. DO NOT tent or remove lid if using steam.
3. Cook product until internal temperature of 185-190°F is reached.
4. Carefully remove baking sheet with tray from oven and remove lid to allow excess moisture to evaporate.
Note: Ensure that product reaches an internal temperature of 185-190°F.
Note: Product should be tempered under refrigeration (40°F) for 12 to 24 hours.
DO NOT REFREEZE.
