The higher milkfat content in European-style sour cream contributes to a richer and more complex flavor compared to American-style sour cream, which typically has around 12-16% milkfat. It's better for baking because it holds its shape better when baked in things like quiches, tarts, and cobblers, and adds richness and moisture to the dish.
