Preparation type: SIMMER
Preparation instructions: Mix 7.5 oz. of starter with 3 quarts of cold water. Reduce 3 cups of Red Wine by half with 2 cups of Shallots, 1.5 oz each of Rosemary, Thyme, and Parsley, 1 teaspoon of whole Black Peppercorns, and 1 Bay Leaf. Add the reduction to the starter and water. Mix in 2-3 oz of Roasted Tomato Paste. Bring to a simmer and mix in 4 oz of Whole Butter. Cook for 1 hour and strain.
