The Rich's Deluxe Pershing Yeast Donut Dough is made with yeast dough rolled in a cinnamon smear. This donut dough is cut into disk coils for easy portioning. The Rich's Donut Dough is ideal for cafes, bakeries, and brasseries.
YEAST RAISED DONUT DOUGH DELUXE PERSHING ROUND
Yeast dough rolled in cinnamon smear and cut into disk coils. Bulk packed.
Preparation instruction: 1. THAW OVERNIGHT IN RETARDER AT 35 - 40 F ON FLOUR DUSTED, PAPER LINED SHEET PAN (RACK COVERED). 2. TEMPER FOR 30 MINUTES AT ROOM TEMPERATURE (FLOOR TIME). 3. PLACE DONUTS ON FRYING SCREENS. 4. PROOF AT 100 F, 60% HUMIDITY, UNTIL TOP OF TEMPLATE IS REACHED. 5. LET DONUTS DRY FOR 15 MINUTES AT ROOM TEMPERATURE (RACK TIME). 6. FRY AT 375 F FOR 50 SECONDS PER SIDE. 7. LET COOL ON SCREEN.
