Preparation instruction: DIRECTIONS: Add to mixer 6 lb 4 oz granulated sugar, 4 lb 12 oz cake flour, 4 lb 4 oz Fudgkake and 3 lb 8 oz water. Pull batter together and mix on speed 1 (on 3 speed mixer) for 3 minutes. Add 3 lbs whole egg to mixer. Scrape down and mix 4 minutes on speed 1. Add 3 lbs 4 oz water, add first half of water then give the paddle several turns. Add the second half of the water and mix 3 minutes on speed 1. Batter Temperature: 65-70F Baking Temperature: 350F “ 360F Specific Gravity: .80-.90
