Use the right thermometers to be sure that you are operating safely by maintaining proper temperature - you'll look good on your next inspection. As for cooking, limit returned food and the extra costs associated with it by serving at the right temperature every time - use meat thermometers. Always calibrate your oven with and oven thermometer - sometimes you will be very surprised at the result.
