LARG E BATCH: SMALL BATCH: TRIUMPH YEAST RAISED DONUT MIX 50 LB 17 LB WATER (48-50%) 24 LB 8 OZ 8 LB 5 OZ (1 GALLON) INSTANT DRY YEAST 13 OZ 5 OZ OR *C0MPRESSED YEAST 2 LB TO 2 LB 8 OZ 12 TO 14 OZ MIX: ADD WATER AND DRY INGREDIENTS INTO THE BOWL AND MIX 1 MINUTE IN LOW SPEED. THEN ADD INSTANT DRY YEAST, AND MIX UNTIL DOUGH IS FORMED. THEN CONTINUE MIXING IN MEDIUM SPEED UNTIL DOUGH REACHES FULL CLEANUP ON BOTTOM OF BOWL. MIX 1 TO 2 MINUTES PAST FULL CLEANUP. * WHEN USING COMPRESSED YEAST, ADD YEAST WITH THE DRY MIX AT THE START OF MIXING. ALSO NOTE: WATER CAN BE VARIABLE DUE TO SHOP CONDITIONS. FOR: 3 SPEED MACHINE: USE SPEEDS 1 AND 2. 4 SPEED MACHINE: USE SPEEDS 2 AND 3. DOUGH TEMPERATURE: 80 F - 82 F. FERMENTATION: TO FULL RISE - APPROXIMATELY 1 HOUR. BENCH TIME: DOUGH IS THEN STRIPPED, MOLDED LIGHTLY, AND GIVEN 20 TO 30 MINUTES RELAXATION TIME. MAKE UP: INTO DESIRED PRODUCTS. PROOF: GIVE 3/4 PROOF WITH JUST ENOUGH MOISTURE TO PREVENT CRUSTING. (APPROXIMATELY 25 TO 30 MINTUES) . FRYING TEMPERATURE: 375 F. STORE IN A DRY PLACE.
