Preparation instruction: Hot water Preparation: ADD slowly 1 package of Cheese Sauce mix to 1 gallon of hot water (190°F), stirring well with wire whisk. COVER and let stand for 10 minutes. REMOVE cover and stir well with a wire whisk until smooth. POUR sauce into serving container and maintain internal sauce temperature at 155°F to 160°F during service. Yield 78 2-fl. oz. servings. FOR SMALLER QUANTITY PREPARATION: SUBSTITUTE these quantities and follow the same instructions. Water (190°F) 2 quarts, Cheese Sauce Mix 4 cups. Yield 39 2-fl. oz. servings. BOILING WATER PREPARATION: BRING 1 gallon of water in a heavy saucepan to a FULL ROLLING BOIL. TURN OFF HEAT. ADD slowly 1 package of Sauce mix, stirring well with a wire whisk. TURN on heat. STIR with a wire whisk over medium heat until thickened and smooth. REMOVE from heat. POUR sauce into serving container and maintain internal sauce temperature at 155°F to 160°F during service. Yield 78 2-fl. oz. servings. FOR SMALLER QUANTITY PREPARATION: SUBSTITUTE these quantities and follow the same instructions. Rapidly Boiling Water 2 quarts, Cheese Sauce Mix 4 cups.
