Preparation instruction: Thaw product for 48-72 hours under refrigeration. Steamer: (Preferred method) Remove foil lid from thawed pan, tent, and return to cover pan during the cooking process. Steam with foil lid on for 45-55 minutes and until product is set and an internal temperature of 180 F is reached. Conventional Oven: Remove foil lid from thawed pan, tent, and return to cover pan during the cooking process. Place pan on sheet tray. Bake at 325 F for 50-55 minutes and until product is set an internal temperature of 180 F is reached. Convection Oven: Not recommeded. Re-therm Directions: 1. Prepare product as directed on package or as above. 2. Portion into desired portion size and refrigerate or freeze until ready to plate. 3. Plate product along with other items such as a vegetable and starch component. To facilitate heating, pour a sauce or gravy over items. * Note: it is best not to exceed a total of 12 oz. of food on any given plate. 4. Re-term according to the Manufacture's guidelines. Conduction Unit: Place dome/cover/lid over the plate. From Thawed: Heat for standard 36 minute cycle. From Frozen: Heat for standard 36 minute cycle. Convection Unit: Place dome/cover/lid over the plate. * Hold product in unti at 38 F for 1 1/2 - 2 hours prior to re-therming. From Thawed: Heat for standard 48 minute cycle. From Frozen: Not recommended.
