This pre-portioned roll dough can be easily baked until golden brown for a quick snack. The Rich's bulk frozen roll dough pack is ideal for concession stands, convenience stores, and gourmet restaurants.
SIMPLY PROOF & BAKE VIENNA ROLL DOUGH
Small soft round white dinner roll perfect for bread baskets. Proof-and-bake format.
Preparation instruction: 1. PLACE DESIRED AMOUNT OF ROLLS ON PAPER LINED SHEET PAN (5 X 6). 2. PLACE IN RETARDER AND DEFROST OVERNIGHT. 3. REMOVE FROM RETARDER AND ALLOW TO STAND AT ROOM TEMPERATURE FOR APPROXIMATELY 15 MINUTES. 4. EGG WASH, SPRINKLE WITH POPPY OR SESAME SEEDS IF DESIRED. 5. PLACE IN PROOF BOX (95°F (35°C) / 85% RELATIVE HUMIDITY) UNTIL ROLLS DOUBLE IN SIZE. 6. PLACE SINGLE CUT ON ROLL. 7. BAKE AT 400°F (205°C) FOR 15-20 MINUTES OR UNTIL GOLDEN BROWN.
