Preparation instruction: Preheat griddle to 375° to 400°F. Put 3 quarts + ½ cup water in large mixing bowl. Add 5 lbs Pancake Mix. Blend with wire whisk until dry mix is well incorporated. (A slightly lumpy batter is acceptable.) Pour or ladle pancakes to a 5-inch diameter. Flip when edges begin to dry (approximately 1 1/2 minutes). Flip only once. Bake approximately 1 1/4 to 1 1/2 minutes on second side. Serve. For 7-inch Waffles: Preheat waffle iron, Put 3 quarts + 1/2 cup water, 10 Large Eggs, beaten, and 1 1/4 cups oil in mixing bowl. Blend well with wire whisk. Add 5 lbs. Pancake Mix. Blend with wire whisk until all dry mix is incorporated. Ladle 4 1/2 ounces of batter into lightly oiled waffle iron. Bake 3 minutes. Serve.
