These extra thick, naturally smoked bacon slices are perfect for chopping and dicing in foodservice applications. To make them, we begin with fresh pork bellies--never frozen--so you get a leaner product with more yield than competitors offer. Working in smaller batches, we slow-smoke our bacon for several hours over real hickory. Finally, we dry age our bacon before its sliced, making for a better-tasting, less salty bacon flavor. Our entire process takes a lot more time, but the resulting flavor makes it all worth it.
