Mark Twain referred to cauliflower as "nothing but cabbage with a college education."  Perhaps its because cauliflower is low in fat, high in nutrients such as folate & vitamin C, and contains compounds that may help prevent cancer.  For low-carb dieters, its makes a great substitute for potatoes since it is low in starch.  When cooking cauliflower, avoid using aluminum and iron pots.  The compounds in cauliflower will react with the metals causing them to change yellow, brown or blue-green.
