Preparation instruction: BLEND 25 lbs all purpose flour and Pre-mix for 5 minutes on low speed. ADD 3 ¾ lbs shortening and MIX for 10 minutes on low speed. ADD 5 ¾ quarts water and MIX for 3 minutes on low speed, then 5 minutes on medium speed. CUT dough into 3½ pound balls and COVER with plastic wrap. LET dough sit for 20 minutes. WEIGH out and roll the tortilla dough balls (bolitas) to desired size. COVER with plastic wrap. LET dough balls sit for 30 minutes. PRESS and BAKE tortillas.
