Preparation instruction: Small Batch: 10 lb Mix, 4 lb 8 oz. water. Large Batch: 50 lb mix, 22 lb 8 oz. water. Mixing: 1 minute low mixing, 2 minutes 2nd on 3 - speed. Batter Temp: 74°F. Floor Time: 10 minutes Fry Temp. 375°F. 1. Always use fresh frying shortening. 2. Always check dough temperatures. 3. Make sure donut machine is operating properly. 4. Don't use a worn-out cutter. Don't let cutter ride in hot shortening. 5. Use proper frying temperature. 6. Don't over fry donuts as pin-holes develop and there will be too much fat absorption.
