Annatto seeds possess a scent which is slightly peppery with a hint of nutmeg. Annatto is used for coloring cheeses, confectionery, butter and cheeses. It is more widely used in the Caribbean and Latin America, especially Guatemala and Mexico. The seeds are also particularly associated with Filipino cuisine. Adds natural color to yellow rice, beans, stews, sauces, and marinades. For cooking, color is extracted into oil by heating 1/2 cup of Goya Annatto Seeds in one cup of corn oil or lard over low heat. When seeds release their color, cool and drain, discarding the seeds.
Goya Whole Annatto Seed - 8 oz. jar, 24 per case
Annatto, also know as achiote, is used primarily in Mexican and Carribbean cooking to impart a rich yellow/orange hue. Annatto can be used as an economical alternative to saffron, however it does not duplicate saffrons delicate flavor.
