This high quality wasabi (powdered horseradish) is a powerful nose tingling condiment. It is made from a knobby green root that grows wild along the banks of mountain streams. Use sparingly on sushi fillings and toppings, or mix with soy sauce for a sashimi dip. SuSHI CHEF NORI:Our seaweed sheets are harvested in a Japanese inlet, whose waters and tides are not too cold or harsh to grow this flavorful delicate seaweed. Our Nori is usually harvested from the first of several seasonal crops, and therefore the iron content is high. Once harvested, it is chopped, rolled and dried in the sun and then toasted into crisp sheets. Sushi Chef Nori is especially delicate and flavorful. Its thickness makes it less likely to break when rolled. The flavor, aroma and crispness of Nori is enhanced by quickly passing the shiny side of the sheet over a flame just before use. Nori sheets are wrapped around sushi rice and fillings to form rolled sushi. When cut into strips, Nori is used to secure finger rolls or to add flavor and color to scattered sushi. Crumbled Nori is also an attractive garnish for salads or rice. Sushi Chef Traditional Japanese Style Mirin is a sweetened rice wine that is an essential ingredient in Japanese cooking. Sushi Chef Mirin is made to our specifications by a famous Japanese Sake manufacturer. It is made in the traditional method of careful brewing and aging, which results in a warm, richly flavored cooking sauce. Mirin is used in marinades and dipping sauces, and in such popular dishes as Teriyaki, Sukiyaki, and Tempura. This cool, sharp condiment is made from tender young ginger roots. Freshly picked ginger is marinated in a brine of rice vinegar and sugar to give it a delightfully pungent taste. It adds the crisp flavor of ginger to fish and vegetable dishes and is a tangy addition to stir fry dishes. Sushi Chef Sushi Vinegar is a specially seasoned rice vinegar that is brewed in a slow and natural process that is centuries old. When mixed with warm rice, it adds the characteristic sheen and flavor of fine sushi rice. The combination of the vinegars mild tartness and the sweetness of sugar also makes it a delightfully simple low-fat salad dressing.
