Fry donuts at 375 degree F to 385 degree F. Store frozen cookie dough at 0 degree F to - 10 degree F. Cookies will stay crisp and chewy if you cool them on paper-lined sheet pans after baking, overwrap with food-grade plastic and store cookies at room temperature for up to 5 days. For perfect proofing of proof-and-bake products, keep dough covered with oiled plastic until dough has doubled in size. Check for sufficient proofing by pressing a floured finger into dough. If indentation remains, dough is proofed. If dough springs back, continue proofing. When handling thawed dough for reshaping into signature products, cut or shape while dough is cold.
