To use a cheese plane, turn the wedge onto its side and delicately slice. Other cutting tools that may be used include a pairing and chefs knife.Perfectly ripe Brie is plump and resilient to touch. In addition, it has a beige-mottled rind. It is extremely important not to use over-ripe or under-ripe Brie in cooking. Over-ripe Brie is runny and its rind separates from the cheese. On the other hand, under-ripe Brie is too thick, white and chalky.
